Asheville Bed and Breakfast Favorite Pizza Recipe

Time crunched is something every person has experienced.  It isn’t pleasant and no one looks forward to it but that said, it is often a reality of life and our Asheville Bed and Breakfast Favorite Pizza Recipe will be faster than going out and definitely beats a sandwich.  

A guest shared this with us and now I am sharing it with you.  It is so fast, so wonderfully delicious and reasonably healthy that it will become your favorite too.

1 Tbs. good quality olive oil
1/2 tsp. of unsalted butter
I small onion cut into rings (use the small rings and save the larger ones for something else.)
1/3 cup balsamic vinegar
1 1/2 tsp. sugar
2-3 ozs of goat cheese.  
I T. olive oil
Fresh Italian parsley

Take out a medium sized skillet and put in the butter and olive oil.  Add your onion rounds.  Use a skillet large enough not to crowd them.  Onions like mushrooms will not brown nicely if you crowd them.  Once brown, add balsamic , sugar and1/3 cup of water stirring until sugar is completely dissolved.  Reduce heat until this is boiling gently to reduce some of the fluid into a glaze.  Remove from heat; cool.

I use a prepared pizza crust as did she.  Everyone looks for their own particular favorite but I have a secret weapon.  A local pizzeria sells me a bit of dough and off I go with no more effort than stopping for milk.  Gotta love it.  The woman who gave me this recipe used the ones in can in the refrigerator section and loved it.  Another woman I spoke to rolled out a piece of a frozen bread loaf sprinkled it with olive oil and used that.
If you have a pizza stone put the crust on that. 
On your crust place goat cheese either dotted or a proportioned amount on what will later be per slice. Leave a bit of room around the edges so your ingredients don’t fall onto the stone when you are cooking pizza. 
Place the onion slices all about the crust including some on the goat cheese.  
Put under the broiler for 7-8 mins.   Remove, sprinkle with parsley and drizzle with the olive oil.  Cut into 6 slices and serve to grateful family.
